Lo Champagne Brut “Special Cuvée” di Bollinger è il risultato del sapiente e delicato assemblaggio tra una piccola parte di vino d’annata e una maggioranza di vini di riserva. Delizioso.
La descrizione del sommelier
È di un bel giallo dorato con un perlage molto fine. È connotato da una bellissima complessità aromatica, con sentori di frutta matura e spezie. Si percepiscono note di pesca e sfumature di mela cotta e composta. In bocca riesce a combinare in maniera equilibrata struttura, persistenza e vivacità. Il palato è vellutato con sapori di pera, brioche e spezie, noce fresca.Abbinamenti
È ottimo insieme a pesce, crostacei e carni bianche. se stappato per un aperitivo, diventa speciale insieme a parmigiano e prosciutto.

Georges Bollinger
Georges Bollinger took over management of the House. Son of the founder Jacques Bollinger and son of Louise-Charlotte Hennequin de Villermont, he would have to lead Bollinger through some of the most delicate episodes of both its own history: the phylloxera crisis, devastating the Champagne vineyard at the turn of the century, the vine-growers’ revolt in 1911, and finally the Great War from 1914. He was a town councillor at Aÿ from 1891 to 1918, and devoted all his energy to his village, which he protected from enemy looters in 1916.
